Apple & Blueberry Crumble 

This Apple & Blueberry Crumble is the easy and delicious summer dessert recipe we all need! It’s loaded with fresh seasonal fruit and double the crunchy crumble (because we all know that’s the best part!).

This recipe combines two classic crumbles – apple and blueberry. While these fruits are usually used for individual crumble recipes, putting them together gives a great texture and sweetness. Plus, the crispy topping adds extra flavor from the browned butter and cinnamon. 

It’s a great recipe to make ahead and store in the freezer for a weeknight dessert or bring to a summer gathering. All you need is a little vanilla ice cream to go on top. 😊

How to make Apple & Blueberry Crumble

Prepare the Fruit Base

I like using Granny Smith apples in this recipe, but any apple variety can work. Simply core and cube the apples into 1 inch sections. I prefer peeling the apples to give the filling a softer texture, but this step is completely optional. 

For the blueberries, you can use fresh or frozen. I actually prefer using frozen berries for most of my baking because they are cheaper, last longer, and taste the same.

Once your apples and blueberries are combined in a mixing bowl, toss in the maple syrup, cornstarch, cinnamon, and lemon juice. These additional ingredients help give the fruit base a sweeter flavor and jam-like consistency. 

Pour the mixture into your 9×9 baking dish and set aside while you prepare the crumble topping. 

Make the Crumble Topping

Like most crumble toppings, this recipe calls for a combination of flour and butter until a wet sand consistency is formed. However, I like adding a few more ingredients to give more flavor and texture to this crumble.

Brown Butter

Any time I make a crumble, browning the butter makes all the difference. It gives a delicious, caramelized nutty flavor to the topping. And it’s so easy!

Put the butter in a saucepan or skillet and warm on medium heat. Let the butter cook until it turns into a light brown amber color. Usually this takes about 5-7 minutes, but keep your eye on it so it doesn’t burn.

Once the butter is browned, pour into a mixing bowl so you combine the rest of the crumble topping ingredients.

Oats & Flour

A standard crumble topping is made from mixing flour and butter. I like using half flour and half raw oats to give it a little more texture. Plus, it gives me an excuse to call this recipe a high-fiber dessert. 😊

Maple Syrup & Brown Sugar

We want all the warm, nutty flavors in this crumble recipe! The mixture of maple syrup and brown sugar give a great depth to the flavor and crunch to the topping.

Combine all topping ingredients with a fork until a wet sand consistency forms. If the mixture is too loose and runny, add 1 tablespoon of flour until you reach somewhat of a dough.

Assemble the Crumble and Bake

Using your hands, sprinkle the topping over your fruit mixture. Bake at 350℉ for 45-50 minutes or until the topping is a crispy golden brown and the fruit below is bubbling.

Can I use different fruits?

Yes! That’s the beauty of a crumble recipe – swap out the fruits with whatever you’ve got on hand. Mangos, strawberries, blackberries, etc. Frozen or fresh fruit would both be great in this recipe.

What’s the secret to a crispy crumble topping?

The best way to get that crunchy texture on the top is baking time and butter! Although 45-50 minutes feels like a long time to bake this dessert, I promise you it’s worth it to let the topping fully cook through. Plus, the browned butter we added helps give it a nice crisp.

Ingredients

Fruit Base

  • 3 apples peeled and diced
  • 3 cups blueberries fresh or frozen
  • 2 tbsp corn starch
  • 1/2 tbsp cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 2 tbsp lemon juice

Crumble Topping

  • 8 tbsp butter (1 stick)
  • 1 cup flour
  • 1 cup oats
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup

Instructions

  • Preheat the oven to 350. Prepare your 9×9 baking dish by spraying with oil
  • To make the fruit filling, combine all filling ingredients in a mixing bowl until fully incorporated. Pour into prepared baking dish. Set aside while you make the crumble topping
  • In a medium saucepan, place a stick of butter on medium heat. Allow the butter to cook until it turns a light amber-brown color. This should take 5-7 minutes. Once browned, immediately take off the heat and set aside
  • While the butter is cooling, combine the rest of the crumble topping ingredients into a mixing bowl. Pour the warm butter over the ingredients and mix with a fork until a wet sand consistency is formed
  • Use your hands to sprinkle the topping over the fruit base evenly
  • Bake at 350 for 45-50 minutes, or until the top is crispy and golden brown, and the fruit below is bubbling
