- 2 cups rolled oats
- ¼ cup maple syrup
- 2 tbsp almond butter
- 1 egg white
- 1 tsp cinnamon
- 2 tbsp ground flax seeds
- ½ tsp salt
- 1 cup coconut flakes
- ¼ cup raisins
In a mixing bowl, combine all ingredients except the raisins. (if you are using any dried fruit, freeze-dried fruit, or chocolate, wait until after it's cooked to mix in!)
Mix ingredients until the "batter" is wet and clumping together. If your batter is too dry, add 1 tbsp of neutral oil (olive oil, avocado oil) until it clumps well
Spread the mixture on a parchment lined air fryer basket. Press the mixture down using your hand or the back of a cup to form one even layer
Air fry at 325°F for 10-15 minutes. At the 10 minute mark, check to make sure it's not burning (your air fryer might be stronger!). Take it out once the granola is golden brown on top
Let the granola sit in the air fryer basket for 10 minutes or until fully cooled. This is important in helping form crunchy clusters!
Once cooled, use your hands or a spoon to break into clusters and mix in any toppings you haven't added
Store in an airtight container in a dry cool place (the pantry!)
