Cauliflower Puree

Cauliflower puree is a nutritious and easy-to-make option for infants and toddlers. It's considered a "Stage 1" food in baby-led weaning and is can be easily adjusted to fit your baby's taste preferences and dietary needs.

Ingredients

  • 4 cups riced cauliflower (1 large head of cauliflower) see recipe notes if using fresh cauliflower!
  • 1 cup water or breast milk

Optional Iron-Boosting Add-Ins

  • 1/2 cup chickpeas
  • 1/2 cup lentils cooked
  • 1/2 cup tofu
  • 1 cup spinach raw or cooked
  • 1/2 cup navy beans

Optional Add-Ins to Introduce New Flavors

  • fresh herbs thyme, basil, dill, oregano, parsley, mint, etc
  • pepper
  • garlic
  • ground mustard

Instructions

  • Prepare your riced cauliflower per bag instructions. Let cool completely before blending. **If you are using fresh cauliflower, see below notes
  • Transfer the soft cauliflower to a food processer, blender, or bowl for immersion blender
  • Add water slowly, adding 1/4 at a time. Depending on the texture of your cauliflower, you might need slightly more or less water
  • Blend for a full 1-2 minutes. This makes it extra creamy! If it is under blended, there could be chunks of cauliflower that easily separate from the water

Notes

For fresh cauliflower, start by removing the leaves and stem from the cauliflower head. Cut the cauliflower into small 1 inch small florets. Rinse the florets under cold water to remove any dirt or debris. Fill a pot with a couple of inches of water and add the cauliflower florets. Cover the pot with a lid and bring the water to a boil. Reduce the heat to low and steam the cauliflower for about 10-15 minutes, or until very tender. You can also steam the cauliflower using a covered microwave-safe bowl with a small amount of water. Microwave on high for 5-7 minutes.
