  • 1 cup cottage cheese
  • 2 eggs

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper. Blend until smooth (you can use a blender or whisk by hand). Pour the mixture into the loaf pan and smooth the top. Bake for 25-30 minutes or until the bread is set and lightly golden. Let it cool slightly before slicing and serving.
  • In a blender or using an immersion blender, combine 1 cup cottage cheese and 2 large eggs until a smooth creamy texture
  • Pour the mixture into the lined baking tray and smooth the top. Aim for the mixture to be roughly 10in x 6in
  • Bake for 35 minutes or until the bread is set and lightly golden. Let it cool completely before slicing and serving.
